Whole Wheat Bread
- 1 pkg. dry yeast
- 2 1/2 Tbsp. honey
- 1/2 c. warm water
- 1 c. milk
- 2 Tbsp. butter
- 2 Tbsp. salt
- 2 Tbsp. wheat germ
- 2 1/2 c. whole wheat flour
- 1 1/2 to 1 3/4 c. flour
- In small mixing bowl, sprinkle yeast and 1 tablespoon honey into warm water.
- Let stand 5 to 10 minutes or until mixture becomes bubbly.
- In small saucepan, combine remaining honey with milk, butter and salt.
- Cook over low heat until butter melts. Remove from heat.
- Cool to lukewarm.
- Stir in yeast mixture. Combine wheat germ and whole wheat flour in a large mixing bowl. Add liquid mixture.
- Stir until smooth.
- Add enough flour to make a soft dough.
- Turn out onto a lightly floured surface.
- Knead until smooth and elastic, about 10 minutes.
- Place dough in a large lightly greased bowl.
- Turn dough over to bring greased side up. Cover with greased waxed paper and a towel.
- Let rise in warm place until doubled in bulk, about 1 hour.
