Stir-Fried Fresh Crab With Ginger

  1. Heat 2 tablespoons of the oil in a preheated wok or deep pan over high heat.
  2. Add the crab and stir-fry for 3-4 minutes.
  3. Remove and set aside.
  4. Heat the remaining oil in the wok or pan over high heat.
  5. Add the ginger and stir-fry until fragrant.
  6. Stir in the scallions, then the crab pieces.
  7. Add the soy sauce, sugar, and pepper, then cover and simmer for 1 minutes.
  8. Serve immediately.
