Grandma's Pineapple Cookies

• 1 cup shortening
• 1-1/2 cup sugar
• 1 egg
• 1 can (9 oz.) crushed pineapple, drained
• 3-1/2 cup flour
• 1 tsp. soda
• 1/2 tsp. salt
• 1/4 tsp. nutmeg
• 2 confectioners sugar
• 2 tbsp. softened margarine
• Pineapple juice (add to desired thickness)
• -or-
• 2 cups confectioners sugar
• 1 tbsp. softened margarine
• Milk
• Vanilla

1. Mix shortening, sugar and egg together.
2. Stir in drained crushed pineapple.
3. Add rest of ingredients.
4. Chill mixture at least one hour.
5. Bake 8-10 minutes at 400F.
6. Icing: Mix ingredients together and spread over top cookies after slightly cooled.
