Classically Easy Caesar Salad
- 1 head romaine lettuce
- 12 cup garlic-flavored croutons
- 12 cup extra virgin olive oil
- 1 large egg yolk
- 2 teaspoons fresh lemon juice
- 12 slices lemon rind
- 34 teaspoon minced garlic clove
- 12 teaspoon Worcestershire sauce
- 2 anchovies
- 18 teaspoon fresh cracked pepper
- 12 cup olive oil
- 14 cup parmesan cheese
- cracked black pepper

- Cut off root end of Romaine.
- Wash leaves carefully in very cold water.
- Refrigerate wet leaves to crisp them while making dressing.
- Pour olive oil into medium bowl.
- Add garlic.
- Using a fork, mash garlic into oil until finely meshed.
- Whisk in egg yolk, then, lemon juice, Worcestershire, salt and pepper.
- Mince anchovies.
- Mash into dressing using fork tines.
- Whisk again until well incorporated.
- Fold in Parmesan cheese.
- Transfer the dressing to an airtight container and refrigerate until ready to serve.
- Tear leaves into a salad spinner, Spin off water.
- Place lettuce into large salad bowl.
- Add croutons and drizzle dressing over all; toss until all covered.
- Garnish with slivers of lemon rind and freshly grated Parmesan and fresh cracked black pepper .
- Serve immediately.
