Nectarine Blitz Torte
- 1/2 c. shortening
- 3/4 c. sifted powdered sugar
- 4 eggs, separated
- 1 c. flour
- 1 tsp. salt
- 3 Tbsp. milk
- 1 1/3 c. sugar
- 3 Tbsp. sliced almonds
- 4 or 5 fresh nectarines
- 1/2 c. whipping cream
- Cream together the shortening and powdered sugar. Beat in egg yolks one at a time.
- Sift flour, baking powder and salt.
- Add to creamed mixture alternately with milk.
- Spread in 2 greased and floured 9-inch round cake pans.
- Beat egg whites until foamy.
- Add 1 cup of sugar a little at a time and continue beating until stiff.
- Spread over cake batter.
- Sprinkle each layer with 1 tablespoon each of sugar and almonds.
- Bake at 325u0b0 for 30 minutes.
- Dice 2 cups of nectarines and sprinkle with 2 tablespoons of sugar.
- Place a layer of cake on serving platter, meringue side down, then nectarines and whipped cream; repeat. Serve.
