Chicken stir fry
- 1 green capsicum cut into slices
- 1 red capsicum cut into slices
- 1 can sweetcorn
- 1/2 fresh lemon juice
- 1 dash salt
- 1 pinch coarse black pepper
- 1 chicken stock cube
- 1 carrot cut into slices
- 1 few florets of broccoli
- Add olive oil in a wok on high heat and add broccoli then lower the heat.
- Keep stirring until its tender but crunchy.
- Then keep aside in a plate.
- Add a bit of olive oil and add carrots, peppers and left over chicken.
- Then stir it and after 2 minutes add salt, pepper, lemon and stock cube.
- Then mix it and add broccoli.
- Keep stirring on high heat for 5 mins and serve it while is hot.
- You can eat it just like that or with rice, noodles, add your favourite sauce to make it saucy or as a wrap.
