Ham Filled Crepes Recipe
- 2 c. finely minced cooked ham
- 2 hard cooked Large eggs, finely minced
- 1/4 c. minced ripe olives
- 2 teaspoon sweet pickle relish
- 3/4 c. mayonnaise
- 8 crepes
- 8 slices Swiss cheese
- Combine ham, Large eggs, olives, relish, and mayonnaise.
- Divide among crepes; roll up.
- Place in shallow baking pan with 1 slice cheese on each crepe.
- Broil till cheese melts.
- Yield: 4 servings.
