Cinnamon Granola with a Mixed Berry Compote
- 1 cup Cashew Nuts
- 1 cup Almonds
- 1 cup Mixed Seeds (pepitas, Sunflower)
- 2 Tablespoons Nut Oil
- 1 teaspoon Cinnamon
- 1 teaspoon Raw Honey
- 1 cup Frozen Berries
- 2 cups Almond Milk
- 1 teaspoon Chia Seeds
- Preheat oven to 180 degrees C.
- Into a food processor add the cashew nuts and almonds; pulse until broken.
- Place the broken cashew nuts and almonds and the mixed seeds onto a baking sheet in a single layer.
- Drizzle with the nut oil and sprinkle with cinnamon.
- Place into the oven for about 10 minutes until golden brown and crunchy.
- Remove it from the oven.
- Once its out of the oven mix the honey into the granola mix (if you want a sweet kick).
- Into the bowl of your food processor place the mixed berries and blitz until you reach a paste-like texture.
- Place 1-2 tablespoons of the berry compote into the bottom of 2 glass serving jars or bowls, then fill them with granola.
- Top each with half of the almond milk and half of the chia seeds.
- Top with 1 further teaspoon of berries and a little extra sprinkle of granola!
- Serve immediately or allow to stand for 10-15 minutes to allow the chia seeds to swell.
