Cinnamon Granola with a Mixed Berry Compote

  1. Preheat oven to 180 degrees C.
  2. Into a food processor add the cashew nuts and almonds; pulse until broken.
  3. Place the broken cashew nuts and almonds and the mixed seeds onto a baking sheet in a single layer.
  4. Drizzle with the nut oil and sprinkle with cinnamon.
  5. Place into the oven for about 10 minutes until golden brown and crunchy.
  6. Remove it from the oven.
  7. Once its out of the oven mix the honey into the granola mix (if you want a sweet kick).
  8. Into the bowl of your food processor place the mixed berries and blitz until you reach a paste-like texture.
  9. Place 1-2 tablespoons of the berry compote into the bottom of 2 glass serving jars or bowls, then fill them with granola.
  10. Top each with half of the almond milk and half of the chia seeds.
  11. Top with 1 further teaspoon of berries and a little extra sprinkle of granola!
  12. Serve immediately or allow to stand for 10-15 minutes to allow the chia seeds to swell.
