Salsa Turkey Loaf
- 2 eggs
- 34 cup salsa, medium chunky
- 12 cup Italian breadcrumbs
- 12 onion, grated
- 12 green pepper, finely diced
- 12 teaspoon chili powder
- 12 teaspoon salt
- 14 teaspoon dried thyme
- 14 teaspoon pepper
- 1 12 lbs ground turkey (or chicken)
- 12 cup monterey jack cheese, shredded
- Preheat oven to 375 degrees.
- In a bowl using a fork, lightly beat eggs.
- Mix in 1/4 cup of salsa, breadcrumbs, onion, green pepper, chili powder, pepper, salt, and thyme.
- Mix in turkey, incorporating evenly throughout.
- Shape into meatloaf pan.
- Add remaining salsa to top of loaf.
- Sprinkle with cheese.
- Bake in oven for approximately 1 hour and 20 minutes.
- Cover with foil for first hour and then remove so cheese browns.
- Let stand five minutes before serving.
