Bean Meatball Soup Recipe

  1. Combine pinto beans and water; soak overnight.
  2. Add in salt, bouillon cubes, onions, and garlic salt.
  3. Cover and simmer for 1 1/2 hrs or possibly till beans are nearly tender.
  4. Add in celery, carrots, tomatoes, and meatballs.
  5. Simmer for 25 min.
  6. Add in cabbage, shredded.
  7. Cook for 5 min more.
  8. Season with salt and pepper.
  9. Sprinkle with parsley.
  10. Meatballs: Combine and shape into 1 dozen meatballs.
  11. Brown in 1 tsp.
  12. oil.
  13. Drain well.
