Seitan Kebabs

  1. Preheat the broiler or grill.
  2. Using 8- to 10-inch metal skewers, alternate the bell peppers, zucchini, and seitan, in that order, until all the ingredients are used up.
  3. There should be enough for 8 skewers.
  4. Brush the barbecue sauce over the kebabs, then place on a foil-lined baking sheet for the broiler or on a piece of foil for the grill.
  5. Broil or grill, turning every 3 to 5 minutes (use an oven mitt!)
  6. until done to your liking.
  7. Allow 2 skewers per serving.
