Squashed Potatoes in Olive Oil

  1. Preheat oven to 200 Celsius.
  2. Wash the potatoes well and peel the onions.
  3. And place in an oven proof dish.
  4. Sprinkle with the salt and place in the oven.
  5. Bake for 30-35 minutes.
  6. Peel and roughly squash the garlic.
  7. When the potatoes are cooked, using the back of a tablespoon squash one by one.
  8. In a small saucepan heat the olive oil with the garlic.
  9. About 3-4 minutes.
  10. When well heated, drizzle the oilve oil with the garlic over the potatoes.
  11. Roughly chop the parsley or coriander and sprinkle over the potatoes.
