Squashed Potatoes in Olive Oil
- 3 small onions
- 1/2 tsp garlic salt
- 50 ml extra virgin olive oil
- 8 small potatoes
- 1 (OPTIONAL) handful of parsley or coriander (depending on preference)
- 4 garlic cloves
- Preheat oven to 200 Celsius.
- Wash the potatoes well and peel the onions.
- And place in an oven proof dish.
- Sprinkle with the salt and place in the oven.
- Bake for 30-35 minutes.
- Peel and roughly squash the garlic.
- When the potatoes are cooked, using the back of a tablespoon squash one by one.
- In a small saucepan heat the olive oil with the garlic.
- About 3-4 minutes.
- When well heated, drizzle the oilve oil with the garlic over the potatoes.
- Roughly chop the parsley or coriander and sprinkle over the potatoes.
