Cherry Pecan Bread
- 1 c. sugar
- 4 Tbsp. butter
- 1 egg
- 2 c. sifted flour
- 1 (4 oz.) jar cherries, cut up
- 1/4 c. cherry juice
- 1/4 c. orange juice
- 3 tsp. baking powder
- 1/4 c. water
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1 c. chopped pecans
- Preheat oven to 350u0b0.
- Cream sugar, butter and eggs until light and fluffy.
- Sift flour, baking powder, soda and salt together. Stir in chopped nuts and cherries.
- Combine cherry juice, orange juice and water.
- Add dry ingredients to sugar mixture alternately with liquid.
- Blend well.
- Grease and flour the bottom, but not sides, of loaf pan and spoon batter into it.
- Push batter into corners, leaving hollow in center.
- Let stand 20 minutes before baking 1 hour at 350u0b0 or until tester comes out clean.
- Cool before turning out on rack and let stand overnight before slicing.
