Horseradish Beef Strudel
- 1 lb baking potato, peeled and chopped
- 2 tablespoons butter
- 12 onion, chopped (about 1 cup)
- 1 lb ground beef (or ground turkey)
- 1 cup sour cream
- 2 tablespoons prepared horseradish, drained
- salt and pepper, to taste
- 2 sheets frozen puff pastry, thawed
- 1 large egg, beaten with a splash of water
- Preheat oven to 400.
- In large saucepan, add potatoes and enough water to over (add salt to water, if desired).
- Bring to boil and cook about 15 mins, or until tender.
- Drain and mash in large bowl.
- While the potatoes are boiling, in a medium skillet, melt butter.
- add onion and cook until clear, about 7 minutes add to mashed potatoes.
- add beef to skillet and cook over medium-high heat until just pink, about 5 minutes add the beef, sour cream and horseradish to the mashed potatoes and onions.
- season with salt and pepper.
- on floured sheet of parchment, roll 1 sheet of puff pastry into 11X15.
- spread half of the potato/beef mixture in the middle, covering 2/3 of surface, leave 1-in edge along the long sides.
- fold in long sides and starting from a short side, roll up to like a burrito.
- turn seam side down on a parchment-paper-lined baking sheet, and brush on the beaten egg/water mixture.
- repeat to make another with remaining ingredients.
- bake until golden, about 30 minutes let cool before slicing and serving.
