Yellow Split Peas With Leeks
- 2 teaspoons olive oil
- 4 leeks, chopped (white part only)
- 3 garlic cloves, finely chopped
- 2 cups water
- 1 cup yellow split peas, uncooked
- 1 teaspoon dried basil
- 14 teaspoon salt
- 14 teaspoon pepper
- 1 cup orange juice
- Heat oil in a medium saucepan over medium heat.
- Add leask, and garlic.
- Cook, stirring frequently, 3 minutes.
- Add small amount of water if necessary, about a tablespoon at a time, to prevent sticking.
- Add remaining ingredients, except orange juice.
- Bring mixture to a boil stirring occasionally, then reduce heat to medium-low, cover and cook 30 minutes.
- Stir in orange juice into saucepan.
- When mixture boils again, cover and continue to cook, 15 minutes more.
- Serve over rice, couscous, or any cooked grain.
