Whole Wheat Crusted Baked Shrimp

  1. Preheat oven to 450 degrees F. Line a rimmed baking sheet with foil and top with a cooling rack.
  2. Set aside.
  3. In one bowl, combine bread crumbs, panko bread crumbs, Parmesan cheese, and all spices.
  4. Set aside.
  5. In a second bowl, combine egg, yogurt, hot sauce, and Dijon mustard.
  6. Take shrimp, dip them into egg mixture first, then coat well with the bread crumb mixture.
  7. Place on a cooling rack and give it a spray with olive oil cooking spray (this will help them crisp up well).
  8. Bake for 4 minutes on the first side.
  9. Flip, spray with olive oil spray, and bake an additional 4 minutes on the other side.
  10. Turn on the broiler and broil for 2 minutes to get them extra crispy and yummy.
  11. Enjoy with homemade cocktail sauce!
