Whole Wheat Crusted Baked Shrimp
- 1 cup Whole Wheat Bread Crumbs
- 1/2 cups Panko Bread Crumbs
- 1/2 cups Parmesan Cheese, Grated
- 1 teaspoon Smoked Paprika
- 1 teaspoon Garlic Powder
- 1 teaspoon Garlic Salt
- 1 teaspoon Pepper
- 2 whole Eggs
- 1/2 cups Nonfat Greek Yogurt
- 1 Tablespoon Hot Sauce
- 1 Tablespoon Dijon Mustard
- 1 pound Shrimp, De-veined And Peeled
- Preheat oven to 450 degrees F. Line a rimmed baking sheet with foil and top with a cooling rack.
- Set aside.
- In one bowl, combine bread crumbs, panko bread crumbs, Parmesan cheese, and all spices.
- Set aside.
- In a second bowl, combine egg, yogurt, hot sauce, and Dijon mustard.
- Take shrimp, dip them into egg mixture first, then coat well with the bread crumb mixture.
- Place on a cooling rack and give it a spray with olive oil cooking spray (this will help them crisp up well).
- Bake for 4 minutes on the first side.
- Flip, spray with olive oil spray, and bake an additional 4 minutes on the other side.
- Turn on the broiler and broil for 2 minutes to get them extra crispy and yummy.
- Enjoy with homemade cocktail sauce!
