Mixed Bean Soup

  1. Heat the oil in a large saucepan and saute the onion, potato, carrot and leek for about 2 minutes.
  2. Add the sliced chili and garlic and cook for 1 more minute.
  3. Stir in the spices and vegetable stock.
  4. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes, or until the vegetables are tender.
  6. Stir in the beans, season to taste with salt and pepper and cook for 10 more minutes.
  7. Serve.
