Marinated Steak Fettuccine With Smoked Mozzarella Sauce

  1. Marinate steak for 2-4 hours or overnight.
  2. To prepare Smoked Mozzarella sauce sautee vegetables in olive oil until translucent, add tomato puree, wine, soy sauce, and reduce by a quarter.
  3. Add beef stock and bring to a boil.
  4. Whisk in smoked mozzarella and heavy whipping cream until thick and bubbly.
  5. Strain.
  6. In a large saute pan on Medium High Heat, add oil until warm.
  7. Add escarole, garlic.
  8. And sugar and saute 1 to 2 minutes.
  9. Add white wine.
  10. Braise the escarole until soft and all the wine is evaporated.
  11. Grill marinated steak to desired temperature.
  12. Slice.
  13. Add roasted peppers and 1 1/2 cups smoked mozzarella sauce.
  14. Simmer until thickened and toss is cooked pasta.
  15. Stir to coat.
  16. Add sliced marinated steak to the top and garnish with Parmesan cheese and green onions.
