Pizza Meatloaf
- 3 ounces crusty Italian bread, cut into 1/2-inch pieces (2 cups)
- 12 cup milk
- 1 12 lbs ground beef
- 15 12 ounces pizza sauce (1 1/2 cup)
- 2 eggs
- 1 cup shredded mozzarella cheese (4oz)
- 1 small onion, grated
- 1 teaspoon dried Italian seasoning
- 12 teaspoon garlic powder
- chopped fresh parsley
- pasta (optional)
- Preheat oven to 350.
- Line jelly roll pan with foil; coat with cooking spray.
- In large bowl, toss bread with milk; let stand until milk is absorbed, 10 minutes.
- To bread, add beef, 1 cup pizza sauce, eggs, 1/2 cup cheese, onion, seasoning and garlic powder.
- On jelly roll pan, shape mixture into a 10 1/2"x5" loaf.
- Bake until meat thermometer inserted into center registers 160, about 1 hour, brushing with 1/2 cup pizza sauce and sprinkling with remaining 1/2 cup cheese during last 15 minutes.
- Let stand 15 minutes before slicing.
- If desired, sprinkle with parsley and serve with pasta as a side dish.
