Melon-Mint Prosecco

  1. 24 ounces mixed melon, cut into 1/2-inch cubes (buy pre-cut melon), plus more for garnish
  2. In a blender, combine melon, mint leaves, vodka, and melon liqueur; blend until smooth.
  3. Pour into flutes or glasses, filling only half full.
  4. Fill the rest of the glass with Prosecco and garnish with a slice of melon and sprig of mint.
