Quick & Easy Butternut Squash Soup
- 1 cup butternut squash, diced
- 12 cup potato, diced
- 12 cup carrot, diced
- 13 cup onion, diced
- 1 teaspoon butter
- 34 cup broth
- 1 pinch caraway seed, ground
- 1 pinch thyme
- 1 pinch ground pepper
- 1 pinch curry powder
- 1 pinch ginger, ground
- 1 pinch nutmeg
- 1 pinch cinnamon
- 1 teaspoon sweetened condensed milk
- 18 cup milk
- Saute diced onions in butter until golden.
- add diced butternut squash, potatoes and carrots and saute until everything starts to brown.
- add broth and all the spices and cook for 15-20 minutes until everything is very tender.
- add the sweetened condensed milk and puree soup to preferred consistency.
- Ad milk for a creamier soup and serve with some toasted bread.
