Sausage Breakfast Bread
- 1 c. raisins
- 1 lb. pork sausage
- 1 1/2 c. brown sugar
- 1 1/2 c. sugar
- 2 eggs
- 3 c. flour
- 1 tsp. ginger
- 1 tsp. baking powder
- 1 tsp. pumpkin pie spice
- 1 tsp. baking soda
- 1 c. cold strong coffee
- 1 c. nuts, chopped
- Simmer raisins in a little water for 4 to 5 minutes.
- Drain well and set aside.
- Mix uncooked sausage and sugars until well blended.
- Add eggs.
- Mix well.
- Sift together flour, spices and baking powder.
- Stir soda into coffee.
- Add flour mixture and coffee alternately to meat mixture, beating well after each addition.
- Stir in raisins and nuts.
- Mix well.
- Pour into a greased and floured 9-inch tube pan.
- Bake at 350u0b0 for 1 1/2 hours or until a toothpick inserted comes out clean.
- Keeps indefinitely in refrigerator.
- Good served warm or cold.
