Date and Ginger Loaf

  1. Place the dates, ginger and bi-carb in a bowl.
  2. Pour 1 cup boiling water over the top and stand for 10 minutes.
  3. Combine the flour, sugar and spice.
  4. Fold in the date mixture and beaten egg.
  5. Pour into a lined 20 x 10 cm loaf pan.
  6. Bake at 180 degrees C for 40-45 minutes or until an inserted skewer comes out clean.
  7. Allow to cool on a cake rack.
  8. Cut into slices and serve spread with some Philly*.
