Date and Ginger Loaf
- 1 cup chopped dates, roughly chopped
- 1/4 cup glace ginger, finely chopped
- 1 teaspoon bicarbonate of soda
- 1 1/2 cups SR flour
- 1/2 cup brown sugar
- 1 teaspoon mixed spice
- 1 egg, lightly beaten
- 125g tub PHILADELPHIA Light Spreadable Cream Cheese
- Place the dates, ginger and bi-carb in a bowl.
- Pour 1 cup boiling water over the top and stand for 10 minutes.
- Combine the flour, sugar and spice.
- Fold in the date mixture and beaten egg.
- Pour into a lined 20 x 10 cm loaf pan.
- Bake at 180 degrees C for 40-45 minutes or until an inserted skewer comes out clean.
- Allow to cool on a cake rack.
- Cut into slices and serve spread with some Philly*.
