Crockpot Red Beans and Rice
- 1 lb small red beans, washed and soaked overnight
- 2 tablespoons garlic, minced
- 1 cup onion, chopped (1 medium)
- 1 teaspoon cajun seasoning
- 1 bay leaf
- 1 lb smoked sausage, cut into quarters lengthwise and sliced (such as kielbasa)
- 1 12 quarts water
- hot cooked rice
- Drain the beans and put them in a crockpot.
- Add the onion, cajun seasoning, and garlic.
- Stir.
- Add enough water to cover the beans, about 1-1/2 quarts.
- Add the bay leaf.
- Cover and cook on HI heat for a total of 8 hours.
- After 7 hours, add the sausage and finish cooking one hour.longer.
- Meanwhile cook rice of your choice.
- To serve.
- put a serving of rice on a plate and spoon the bean mixture over.
- The beans and rice may also be mixed together and served.
- Red beans and rice may serve as a main dish or as a side dish.
