Mock Muffin

  1. Place English muffin in toaster and toast.
  2. In a microwave safe bowl, about the same diameter as the English muffin, place the 1 slice Canadian bacon and 3 egg whites.
  3. Season with salt and pepper.
  4. Loosely cover with plastic wrap.
  5. Microwave on high for 1 minute.
  6. Remove from microwave and gently stir egg whites.
  7. Microwave 30 seconds more.
  8. Remove and immediately place a cheese slice over hot egg whites.
  9. Slide onto toasted English muffin.
  10. Repeat with remaining ingredients.
