Pork Stroganoff

  1. Heat a little butter in a frying pan and cook leek until tender.
  2. Cook pork in small amounts and stir constantly for 1 - 2 minutes until just browned over med-high heat.
  3. Add button mushrooms and red capsicum and cook a further 2 minutes.
  4. Stir in combined Vegemite*, tomato paste, sour cream and chopped parsley.
  5. Heat gently, but do not boil.
  6. Serve immediately with pasta.
