Pork Stroganoff
- 1 leek, finely sliced and washed
- 500g pork fillets or leg steaks, finely sliced Safeway 1 lb For $5.99 thru 02/09
- 1 1/2 cups sliced button mushrooms
- 1/2 red capsicum
- 2 teaspoons VEGEMITE
- 1 tablespoon tomato paste
- 1/2 cup sour cream
- 2 tablespoons chopped parsley
- cooked penne pasta, for serving
- Heat a little butter in a frying pan and cook leek until tender.
- Cook pork in small amounts and stir constantly for 1 - 2 minutes until just browned over med-high heat.
- Add button mushrooms and red capsicum and cook a further 2 minutes.
- Stir in combined Vegemite*, tomato paste, sour cream and chopped parsley.
- Heat gently, but do not boil.
- Serve immediately with pasta.
