Sweet Potato or Yam Casserole

• 30 ounces canned sweet potatoes or 30 ounces yams
• 10 ounces cinnamon chunky applesauce
• 12 cup butter
• 12 cup orange juice
• salt
• pepper
• marshmallows
• sherry wine

1. Blend in Cuisinart all ingredients except marshmallows and sherry.
2. Should be souffle consistency.
3. Add sherry to taste.
4. Place in greased casserole.
5. Add marshmallows to top.
6. Place in 300 oven until hot and marshmallows are golden brown.
7. Note: You may use honey or maple syrup instead of sherry.
