Stuffed Peppers
- 4 whole Red, Green, Yellow Or Orange Peppers
- 1 cup Dry Couscous, Cooked According To Package Directions
- 1 can (15 1/2 Oz. Size) Black Beans, Drained And Rinsed
- 1 can (14 1/2 Oz. Size) Diced Tomatoes, Undrained
- 2 Tablespoons Green Onions, Chopped
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Pepper
- 1/2 cups Cheese, Shredded
- Preheat oven to 400 F.
- Wash the peppers, cut off the top and hollow out the inside.
- Set them aside.
- Cook couscous according to package directions.
- In a bowl combine cooked couscous with beans, tomatoes, onions, salt, pepper and cheese.
- Spoon mixture into peppers.
- Place peppers in a casserole dish, making sure they sit upright and cover the dish with a sheet of foil.
- Bake for 45 minutes or until peppers are soft when pierced with a fork.
- Makes 4 servings.
