Zucchini Poppy Seed Bread
- 3 cups flour
- 1 cup sugar
- 1 tsp. baking soda
- 1/4 tsp. Magic Baking Powder
- 2 cups shredded zucchini, squeezed dry
- 3/4 cup Renee's Poppy Seed Dressing
- 1/2 cup cholesterol-free egg product
- 1/4 cup oil
- 1 Tbsp. vanilla
- Heat oven to 350F.
- Mix flour, sugar, baking soda and baking powder until blended.
- Combine remaining ingredients in large bowl.
- Add flour mixture; stir just until blended.
- (Do not overmix.)
- Pour into 2 greased and floured 9x5-inch loaf pans.
- Bake 1 hour to 1-1/4 hours or until toothpick inserted in centres comes out clean.
- Cool 15 min.
- Remove from pans to wire racks; cool completely.
