Mashed Potato Pie
- 2 lbs irish potatoes
- 34 cup cheddar cheese
- 1 cup evaporated milk
- 5 tablespoons unsalted butter
- parsley
- chives
- 3 minced garlic cloves
- salt and pepper
- 1 cup breadcrumbs
- 12 cup cheddar cheese
- 1 minced garlic clove
- chives
- salt and pepper
- Boil potatoes in salted water until soft.
- Peel and mashed them with a folk or potato masher/ ricer.
- Add the butter, salt and chopped pepper, parsely, chives and garlic.
- Mix well.
- Add the grated cheese and evaporated milk and mix well untill smooth.
- Make the topping by mixing all the ingredients in a bowl.
- Put the potato mix in a lightly greased 9X9 pyrex dish, top with breadcrumb anf cheese mix.
- Bake in a preheated 350 degree oven for 25-30 minutes or until top gets golden.
- let rest for 10 minutes before serving.
