Taylor's Chili

  1. In a large stock pot over medium heat, add achiote oil and heat up oil.
  2. Add beef and sprinkle some of the salt over beef now.
  3. Brown beef.
  4. Set cooked beef aside.
  5. In same pot add onions and a bit of hot water to release the caramelized bits on the bottom of the pan from the meat.
  6. Cook onions for 2 minutes.
  7. Add to the onions the tomato paste and cook for 1 minute.
  8. Return beef to pot.
  9. Add in broth.
  10. Stir.
  11. Add in all the spices.
  12. Add in fire roasted tomatoes, beans.
  13. Stir to combine, lower heat to medium low and simmer for one hour, covered.
