Oven-Baked Buttermilk Chicken Meal

  1. Preheat oven to 400F.
  2. Empty coleslaw blend into medium bowl.
  3. Add dressing; toss to coat.
  4. Cover.
  5. Refrigerate until ready to serve.
  6. Place coating mix, poultry seasoning and pepper in shaker bag.
  7. Close bag; shake gently to mix.
  8. Moisten chicken with buttermilk, turning to evenly coat both sides of each chicken breast.
  9. Gently shake off excess buttermilk.
  10. Add 1 or 2 pieces of chicken to shaker bag; shake until evenly coated.
  11. Place in single layer in foil-lined 15x10x1-inch baking pan.
  12. Discard bag and any remaining coating mix.
  13. Bake 20 min.
  14. or until chicken is cooked through (170F).
  15. Serve with the coleslaw and sweet potatoes.
