Butter Lettuce, Lox and Tarragon Schmear Bagel Sandwiches
- 2 ounces, weight Cream Cheese (low Fat Is Fine)
- 2 Tablespoons Sour Cream Or Greek Yogurt
- 2 teaspoons Minced Fresh Tarragon
- 1 pinch Black Pepper
- 2 whole Everything Bagels, Split Open (or Any Kind Of Bagels You Like)
- 4 ounces, weight Lox
- 2 slices Red Onion
- 1 whole Medium Tomato, Thinly Sliced
- 4 leaves Butter Lettuce
- 2 whole Fresh Lemon Wedges, To Squeeze On Top (optional)

- For the tarragon schmear, beat together all ingredients in a medium bowl until smooth; store refrigerated.

- To make the sandwiches, spread a bit of the tarragon schmear on the cut side of each bagel.
- On the bottom half of each bagel, add the lox, red onion, tomato, lettuce, and a squeeze of lemon, if desired.
- Add the bagel top.

- Serve.
