Butter Lettuce, Lox and Tarragon Schmear Bagel Sandwiches

  2. For the tarragon schmear, beat together all ingredients in a medium bowl until smooth; store refrigerated.

  4. To make the sandwiches, spread a bit of the tarragon schmear on the cut side of each bagel.
  5. On the bottom half of each bagel, add the lox, red onion, tomato, lettuce, and a squeeze of lemon, if desired.
  6. Add the bagel top.

  8. Serve.
