Stuffed Zucchini
- 5 whole Zucchini
- 8 slices Cooked Ham
- 3 slices Mortadella
- 2 whole Eggs
- 1 bunch Parsley, Chopped
- 1 clove Garlic, Grated
- 3/4 cups Breadcrumbs
- 5 Tablespoons Grated Parmesan Cheese, Divided
- 1/2 pounds Shredded Mozzarella, Divided
- 1 teaspoon Salt And Pepper
- 1- 1/4 cup Crushed Tomatoes
- 1 bunch Fresh Basil Leaves
- Thoroughly wash zucchini and cut in halves.
- Remove the flesh, cut into pieces, and saute in a pan with a little olive oil.
- Set aside.
- Chop the ham and the mortadella.
- Put the mortadella, ham, eggs, parsley, grated garlic, breadcrumbs, half of the grated parmesan and some of the mozzarella in a bowl and stir.
- Season with salt and pepper.
- Work the mixture by hand, adding the zucchini flesh and mixing well.
- Stuff the hollowed zucchini with the filling and place on a greased oven dish.
- Pour the crushed tomatoes over the top and bake at 350 deegrees for 23 to 35 minutes.
- Check for doneness.
- Add the remaining mozzarella and dust with some parmesan.
- Place in the oven for another 5 minutes until the cheese melts.
- Remove from the oven and leave to cool.
- Add fresh basil leaves on top before serving.
