White Bean and Asparagus Salad
- 12 lb fresh asparagus, trimmed & cut into 1-inch pieces
- 5 sun-dried tomatoes, chopped
- 1 tablespoon garlic, minced
- 1 tablespoon brown sugar
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon water
- 1 teaspoon spicy mustard
- 14 teaspoon dried rubbed sage
- 12 teaspoon salt
- 12 teaspoon pepper
- 1 (19 ounce) can cannellini beans, rinsed and drained
- 14 cup red onion, chopped
- 1 (5 ounce) bag mixed salad greens
- 1 tablespoon parmesan cheese, shredded
- Steam asparagus and dried tomatoes for 2-4 minutes.
- Plunge asparagus in cold water, drain.
- In a bowl wisk together garlic and next 8 ingredients; add asparagus, tomatoes, beans and onion, toss to coat.
- Cover and chill 1 hour.
- Serve mixture over salad greens; sprinkle with cheese.
