Bengali-Style Oven-Fried Potatoes

  1. Preheat oven to 400F (200C).
  2. Remove oven racks and spray them with oil.
  3. Wash potatoes and slice them lengthwise into sticks 1/2 inch thick or crosswise into rounds 13 inch thick.
  4. Trnasfer to a baking pan and spray well with oil.
  5. Add seasonings and toss to coat.
  6. Place the rounds in a single layer on the oven racks.
  7. Place the racks in the centre of the oven.
  8. Bake until the potatoes are tender, with a deep, golden-brown crust, about 20 to 25 minutes.
  9. Serve piping hot.
