You Can't Beat 'em Healthy Blender Muffins
- 1 apple, cored (peel if you want)
- 9 prunes
- 9 dates
- 2 small bananas
- 3 eggs
- 14 cup butter, softened
- 1 teaspoon vanilla
- 1 teaspoon salt
- 12 cup orange juice
- 1 12 cups whole wheat flour
- 12 cup sunflower seeds
- 1 cup rolled oats
- 12 cup chopped walnuts
- 13 cup powdered milk
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 12 cup coconut
- Preheat oven to 350F.
- Blend the apple, prunes and dates until pureed.
- Add the bananas, eggs, butter, vanilla, salt and juice and blend again.
- Mix together the remaining ingredients in a large bowl.
- Add the blender mixture to the ingredients in the bowl and mix well.
- Pour into greased or lined muffin tins and bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
