Seven Layer Cobb Salad Recipe
- 1 sm. head lettuce, shredded
- 1 sm. sweet onion, thinly sliced
- 2 (8 ounce.) cans water chestnuts, thinly sliced
- 2 c. celery, diced
- 2 (10 ounce.) pkg. frzn peas, thawed
- 1 1/2-2 c. mayonnaise
- 2 tbsp. sugar
- 2 lg. tomatoes, peeled, seeded & minced
- 1 whole chicken breast, skinned & minced
- 2 ounce. blue cheese, crumbled
- 4 hard cooked Large eggs, sliced
- 1/2-1 pound bacon, cooked crisp & crumbled
- Layer the first 5 ingredients in a serving bowl.
- Mix mayonnaise and sugar together, spread over top of salad, sealing to the edges.
- Cover and chill overnight.
- Before serving, arrange the cheese, tomato, chicken, egg and bacon on top.
- This works well in an oval serving bowl or possibly 9 x 13 inch pan.
- A beautiful salad for a buffet.
- Serves 16-20.
