Creamed Fresh Haddock Recipe
- 1 pound fresh haddock fillet (or possibly other hard white fish)
- 1/2 c. melted butter
- 1/2 c. slivered onion
- 1 c. light cream
- Flour
- Salt and pepper
- 1/2 teaspoon dry mustard
- Wash fillets; pat dry.
- Dip fillets in melted butter, dredge in flour.
- Arrange in shallow baking dish in single layer.
- Arrange onions on top of fish and sprinkle with salt and pepper.
- Add in cream.
- Top with any remaining butter.
- Bake in preheated 350 degree oven for 20 to 25 min or possibly till fish flakes easily with fork.
- Baste with pan juices several times during cooking.
- Remove fish from baking dish.
- Keep hot.
- Stir dry mustard into cream mix in baking dish.
- Add in salt and pepper to taste.
- Pour sauce over fish.
- Serve fish garnished with minced parsley and sprinkle lightly with paprika.
- Makes 4 servings.
