Cheesy Shrimp n Quinoa

  1. Add water or broth and quinoa to a pot and bring it to a boil.
  2. Reduce heat, cover and simmer for about 15 minutes.
  3. Remove from heat and stir in the cheese and milk.
  4. Season shrimp with salt and pepper.
  5. Add olive oil and shrimp to a pan and cook over medium high heat for 3-4 minutes, until shrimp are just slightly pink.
  6. Add lemon juice, parsley, green onions and garlic and saute for 3 more minutes.
  7. Put shrimp mixture onto a separate plate.
  8. Add chopped chard leaves to the same pan and saute 3-4 minutes, or until wilted.
  9. Serve chard and shrimp mixture on top of the cheesy quinoa.
  10. Enjoy!
