Date and Chocolate Chip Cake
- 1 cup dates unsweetened, chopped
- 1 1/2 teaspoons baking soda
- 123 cups water boiling
- 1/2 cup margarine
- 1/2 cup sugar
- 2 large eggs
- 1 3/4 cups flour, all-purpose
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons mini chocolate chips semi-sweet
- 3 tablespooons walnuts finely chopped
- Combine dates and 1 1/2 teaspoons soda in small pan.
- Pour boiling water over dates; stir to blend.
- Let stand 30 minutes.
- Cream margarine and sugar.
- Add eggs and beat well.
- Combine flour, soda, baking powder, and salt.
- Alternately add dry ingredients and date mixture to creamed mixture beginning and ending with dry ingredients.
- Batter will be thin.
- Pour into oiled and floured 9 x 13-in ch baking pan.
- Sprinkle chocolate chips and walnuts over batter.
- Bake at 350F (180C) for 25 to 30 minutes or until cake tests done.
- Cool.
