Pacific Saury Simmered in Refreshing Ponzu Sauce

  1. Cut the heads and tails off the fish and remove the innards.
  2. Divide into 4 equal pieces.
  3. Add sake and ponzu sauce in a pot and bring to a boil.
  4. Lay the fish on the pot, and add ginger, red chili pepper, and ponzu sauce.
  5. Cover with a lid and simmer for 10 minutes.
  6. Remove the lid, cover with a drop lid (otoshibuta) and simmer until the broth has evaporated.
  7. Then it's done.
