Pacific Saury Simmered in Refreshing Ponzu Sauce
- 3 Pacific saury
- 1 piece Finely chopped ginger
- 1 pepper Sliced red chilli pepper
- 50 ml Ponzu
- 50 ml Sake
- 50 ml Vinegar
- Cut the heads and tails off the fish and remove the innards.
- Divide into 4 equal pieces.
- Add sake and ponzu sauce in a pot and bring to a boil.
- Lay the fish on the pot, and add ginger, red chili pepper, and ponzu sauce.
- Cover with a lid and simmer for 10 minutes.
- Remove the lid, cover with a drop lid (otoshibuta) and simmer until the broth has evaporated.
- Then it's done.
