Marinated Chunky Carrots

  1. Steam carrots over boiling water until just tender, about 7 to 10 minutes.
  2. Meanwhile, in a small bowl, whisk together oil, vinegar, and mustards.
  3. Then stir in mint, dill, and capers.
  4. In a large bowl, toss together carrots and dressing.
  5. Cover and refrigerate for at least an hour or overnight.
  6. Serve chilled.
