Lemon Chicken
- 3 tbsp Butter
- 1 tbsp Olive oil
- 5 Chicken cutlets
- 1 cup Flour
- 2 tbsp McCormick Montreal Chicken seasoning (or poultry seasoning)
- 1/3 cup Lemon juice
- 1/2 cup White wine
- 1/4 cup Olive oil
- 1 1/2 tbsp Sugar
- 1/2 tbsp Basil
- 1/2 tbsp Oregano
- 1/2 tbsp Parsley
- 2 clove garlic chopped
- In bowl combine 1/4 cup olive oil, wine, lemon juice, garlic, sugar, basil, parsley and oregano...mix well
- Combine poultry seasoning and flour in shallow dish
- Melt butter and oil in large skillet over medium heat..
- Dip chicken in flour mixture to coat and add to skillet
- Browm chicken on both sides approx 5-7 min
- Chicken should be browned but not cooked all the way through, remove from pan onto plate lined w paper towels
- Wipe extra oil from pan, return to stove
- Add 1 tblsp flour to liquid "sauce" wish well to combine
- Pour sauce in skillet cook over low heat 2-3 min untill thickens slightly
- Return chicen to pan w sauce....simmer 8-10 min until chicken is cooked through n sauce has thickened
- I serve with rice n veggies
