Chicken Fried Steak

  1. Sprinkle salt and pepper evenly over steaks.
  2. Set aside.
  3. Combine cracker crumbs, 1 cup flour, baking powder, 1 tsp salt, 1/2 tsp black pepper and red pepper in a shallow dish.
  4. Whisk together 3/4 cup milk and both eggs.
  5. Dredge steaks in cracker crumbs mix; dip in milk mix and dredge in cracker mix again.
  6. Pour oil into a 12 inch skillet and heat to approximately 360 degrees.
  7. Fry steaks 3-3 1/2 minutes.
  8. Turn and fry for 3-3 1/2 minutes on the other side until golden brown.
  9. Remove to wire rack on jelly roll pan.
  10. Keep warm in a 225 degree oven.
  11. Carefully drain hot oil, reserving cooked bits and 1 Tbsp drippings in skillet.
  12. Whisk together remaining 1/4 cup flour, 1 tsp salt, 1 tsp pepper and 4 cups milk.
  13. Pour mix into reserved drippings in skillet and cook over medium high heat, whisking constantly (10-12 minutes or until thickened).
  14. Serve gravy over steaks and mash potatoes!
