Salad O Mexico
- 425 can Corn kernels
- 2 Zucchini finger
- 1 medium red onion
- 1/2 Red capsicum
- 1 Handful of snow peas
- 2 tbsp Fresh parsley
- 1 Punnet cherry tomatoes
- 1 Avocado
- 1 Juice of 1/2 a lemon
- 2 small red chilli
- 1 Salt & pepper
- Finely dice onion, capsicum & zucchini and throw in a bowl with corn kernels.
- Finely slice snow peas and chilli, throw in the bowl.
- Chop avocado and parsley, halve tomatoes and add the the bowl.
- Squeeze some lemon juice season with salt and pepper and you are home!
- Enjoy!
