Traditional Mashed Potatoes

  1. Place potatoes in a saucepan and cover with water.
  2. Cover and bring to a boil; cook for 20-25 minutes or until very tender.
  3. Drain well.
  4. Add soymilk, vegan margarine, salt and pepper; mash until light and fluffy.
  5. Add more soymilk and vegan margarine, if needed, to get a creamier texture.
