Taste-of-the-Tropics Dessert Pizza

  1. Pizza Base: Place cake mix, butter and eggs in 12-qt.
  2. bowl of electric mixer fitted with paddle attachment.
  3. Beat on low speed 1 to 2 min.
  4. or until well blended, stopping occasionally to scrape bottom and side of bowl.
  5. Divide evenly into four 10-inch round layer pans sprayed with cooking spray (or two layer pans for trial recipe), adding about 1 lb.
  6. 10 oz.
  7. of the batter to each pan.
  8. Press onto bottoms of pans.
  9. Bake in 300 degrees F-convection oven 15 to 18 min.
  10. or until tops are golden brown and wooden toothpick inserted in centers comes out clean.
  11. Cool in pans on wire racks.
  12. Tropical Topping: Combine cream cheese, goat cheese, pineapple, 6 Tbsp.
  13. of the marmalade (or 3 Tbsp.
  14. of the marmalade for trial recipe) and the orange zest in 12-qt.
  15. bowl of electric mixer fitted with paddle attachment.
  16. Beat on low speed 1 min.
  17. or until well blended.
  18. Fold in whipped topping; cover.
  19. Refrigerate until ready to use.
  20. Remove Pizza Bases from pans.
  21. Spread each with 1-1/4 cups (10 oz.)
  22. Tropical Topping; top evenly with fruit.
  23. Melt remaining 3/4 cup marmalade (or remaining 6 Tbsp.
  24. marmalade for trial recipe) in small saucepan on low heat.
  25. (Or, place in small microwaveable bowl and microwave on HIGH until melted.)
  26. Brush evenly over fruit.
  27. Refrigerate pizzas 1 to 2 hours or until chilled.
  28. Sprinkle with coconut just before serving.
  29. Cut into wedges to serve.
