Davies' Bourbon Chili
- 12 cup Bourbon
- 12 cup coffee
- three 15oz cans tomato sauce
- four large tomatoes
- 1 lb ground beef
- 1 lb Italian sausage
- one package bacon
- three ear of corn
- one leek
- one red pepper
- one bundle green onion
- one yellow onion
- two head of garlic
- five jalapeno pepper
- one 15oz can black beans
- one 15oz can garbanzo beans
- one 15oz can adzuki beans
- 2 tablespoons chili powder
- 1 tablespoon cumin powder
- 1 tablespoon toasted and ground szechuan peppercorns
- 3 teaspoons turmeric
- 3 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon ground black peppercorns
- 1 teaspoon ground coriander
- 1 teaspoon ground cardamom
- Remove seeds from jalapenos and red pepper.
- Dice all vegetables and add to large pot (at medium low heat) along with all liquids, spices, and legumes (rinse legumes before adding).
- Cook bacon in separate pan until semi-cooked, then add Italian sausage and beef--cook until browned, and mash into small pieces, discarding liquid as it accumulates.
- Add meat to pot with sauce and vegetables, cover and simmer for at least 45 minutes.
- After cooking, add another shot or two of bourbon.
