Ham Rosti

  1. Grate the potatoes and place in a colander.
  2. With your hands, squeeze out as much of the liquid as you can.
  3. Place the grated potatoes in a large bowl.
  4. Add the ham, cheese and chives to the bowl.
  5. Season with salt and pepper and stir until well combined.
  6. Heat a non-stick skillet over medium heat, add the olive oil.
  7. When hot, drop 1/3 cup portions of the rosti mix into the skillet.
  8. Cook for about 3 minutes on each side, until golden and crisp.
  9. Transfer to a platter and cover to keep warm, while cooking the rest.
